Cookie Monster Says "I Love Cookies"

Cookies are fun to eat in every way. They are a stomach fillers and healthier than other chip-stuff. That is why Sesame Street has the famous "Cookie Monster," in the thought of cookies. Yum!

A lot of these recipes are available online and in books. Moreover, a lot of other recipes come from basic recipes like dough that is made up of flour base, and bread sticks, and biscuits.

Keebler, Chips Ahoy, and Mrs. Fields cookies are what children love to eat. Butter, peanut butter, Danish, and common bakery cookies are loveable, as well.

Here are some cookie recipes I've tried:

1. Oatmeal Crispies

You will need:

1cup salted butter
1cup sugar
2 eggs
½ cup flour
¾ tsp baking powder
Dash salt
2 cups oatmeal

In a bowl, combine butter and sugar. Whip till blended, using a wire whip.
Beat in the eggs, one at a time. Whip well after each addition.
Mix together flour, baking powder and salt in another bowl.
Lightly whip with the butter-sugar-egg blend.
Finally stir in the oatmeal till blended, and get ready to bake.

To bake:

Preheat oven to 350 degrees F for about 10 minutes. Then drop cookie dough with big spoons on a parchment-lined baking sheet or silicone mat. Bake for about 10-15 minutes or when the edges of the cookies start to turn brown.

2. Brown Sugar Shortbread

1cup brown sugar, packed 250 ml
1 lb soft butter 450ml
5 cups sifted all-purpose flour 1.25L

Combine all ingredients and squeeze and knead the dough with hands until smooth and satiny, about 20 minutes. Chill overnight.

Heat oven to 300 F (150 C).

Work dough, bit by bit, with hands until soft enough to roll. Roll ¼ inch (0.5cm) thick (see note ***) and cut into rounds, squares or any desired shape.
Bake 20 to 25 minutes or until set, but only lightly browned on the bottom.

Note: if you have one, use a springerle rolling pin for pretty designs.
***makes 4 ½ to 5 dozen medium cookies

3. Hermits

1 cup shortening 250 ml
2 cups brown sugar packed 500ml
4 eggs 4
¼ cup strong cold coffee 60ml
2 cups seedless raisins 500ml
1 cup chopped nuts 250ml
4 cups sifted all purpose flour 1L
1 tsp salt 5ml
1 tsp baking soda 5ml
1 ½ nutmeg 7ml

Heat oven to 375 F (190 C). Grease cookie sheets.
Combine shortening, sugar and eggs and beat until fluffy.
Stir in coffee, raisins, and nuts. Sift flour, slat, baking soda and nutmeg together into first mixture and stir to blend. By rounded teaspoonfuls on prepared cookie sheets. Bake 10 to 12 minutes or untie set.

Makes about 9 dozen.

Who stole the cookie from the cookie jar? Hohoho! Cookie Monster says "I love cookies!"
